Supply Chain

Procurement:

The abattoir philosophy is to produce the finest quality products with full confidence in traceability from 'stable to table'. Livestock are procured directly from local farmers under a livestock quality assurance scheme. We deal directly with the suppliers and close monitor closely the production process on the farm. The production system offers the customers a consistent supply and as well a guarantee of product quality and full traceability from farmer to consumer.

Our approach is ensuring complete integrity to every aspect of our supply chain, from correct raw material sourcing, right through to end use by the consumer. We have achieved this through use of the best systems and processes, and a commitment to excellent quality on all times. 

Slaughtering:

The abattoir slaughters an average of 4,820 cattle and 115,000 pigs per year, from which it produces 1,319,132 tonnes of beef and 8,497.095 tonnes of pork. The slaughtering of small ruminants averages 2,000 per year.

Slaughtering of Pigs:

The abattoir has the capacity to slaughter between 160 pigs per hour that is an average of a pig every 16 seconds. It operates between 3 to 4 days a week, depending on the demand for the product. During the year 2008 there was a production of 102,104 pigs.

Slaughtering of Bovines:

This has the capacity of 15 cows per hour, meaning that every 4 minutes a carcass is processed. The production unit functions once a week generally every Friday, and an average of 90-120 cattle are processed depending solely on the demand.

Conservation System:

The abattoir is equipped with 6 chillers, for the temporary chilling of carcass. These chillers are kept at a temperature between 0 to 4 degrees Celsius, so that the entire carcasses reaches 4°C during the night before they are sold. A freezer that runs below 18°C Celsius is used for meat that will need conservation at low temperature for a longer period of time. 

Processing Plant:

Malta has invested heavily in a new state of art meat deboning and cutting plant. It is housed within the existing building at the civil abattoir complex in Marsa. The plant is designed to allow deboning/cutting of 350 pig carcasses (average weight 82kgs) or 50 bovine carcasses (average weight 270kgs) daily.

The civil abattoir has ensured to invest in ultra-modern, EU and EFSIS approved processing facilities. Its strategy is focused on delivering premium quality beef and pork products tailored to specific customer requirements at competitive prices.
